Before I share the recipe for Tiramisu cake, here are a few things that you must know. Number one, my sister Fabiha made it from the scratch because duh she is a food magician. Number two, it’s not at all hard to make this dessert but it will require your love and effort. And last one, there are two versions of this dessert. The original one uses ladyfingers as a base and modified version uses a sponge cake. You will actually save more time if you can get your hands on ladyfingers.
The Heavenly Tiramisu Cake
Without wasting anymore time, let’s start making the delicious Tiramisu cake
Sponge Butter Cake
4 eggs, 2 cups flour, 2 cups castor sugar, 1 cup butter, half cup milk, vanilla essence, 1 tsp. baking powder, 1/2 tsp. baking soda
Sponge Cake Recipe
For cake beat sugar with melted butter until you get a thick consistency. Add eggs to this mixture one by one and beat till peaks are formed. After that, add flour (mixed with baking soda and baking powder) to the mixture and fold it gently.
Add few drops of vanilla essence to the mixture and transfer it to your baking pan, grease it with some oil or butter and bake for 45 to 50 minutes in preheated oven at 180 degrees.
If you do not have an oven, you can make this cake easily on stove. Preheat a large size pan for 10 minutes with 2-3 cups of salt at the bottom.
Put your cake pan on a stand over heated salt and bake for 50 minutes.
In order to check if the cake is baked right, stick a tooth pick to see if it comes clean.
Tiramisu(from the Scratch)
*6 large egg yolks
*1 x 386 g can of condensed milk
*1 x 120 g of cream cheese
*1 kg of home made yogurt cheese/cottage cheese
Recipe for yogurt cheese is easy peasy. Always buy fresh yogurt(not the store bought). Scoop the yogurt into a cheese cloth(malmal ka kapra) over a colander. Tie the cheese cloth firmly and hang it over your kitchen counter or on some hook to let it drain for 6-7 hours. If you use fresh yogurt, it will always turn out to be perfect without fail.
*One pack of heavy whipping cream
*2 pounds of sponge cake (already made)
*2 cups of cold espresso
*Vanilla essence few drops
*1 ounce coco powder for dusting
Recipe for Tiramisu
Making Sabayon: Sabayon is simply a folded mixture of egg yolks which are double boiled. A double boiler method is to slowly combine(not whip) egg yolks in a bowl over simmering water. Cook the mixture for about ten minutes on low heat. This is your Sabayon
Whipping Egg Yolks: After ten minutes, remove Sabayon from the heat and whip yolks until thick and lemon colored. Let it cool briefly(this is important) and then add vanilla extract or essence in the egg yolks mixture.
Add cream cheese and yogurt cheese mixture to whipped yolks and beat until well combined. After that, add the whipped cream and fold it gently to the mixture. Lastly, add in the can of condensed milk
Mix 3 tbsp of grounded coffee in two cups of boiling water and set it aside to cool down. Once cooled dip pieces of cake strips in coffee just long enough to get them wet(do not soak)
Finally Arranging the Tiramisu Cake
Arrange cake pieces at the bottom of a dish. Spoon half the tiramisu cream filling over cake.
Repeat process with another layer of cake. Then add second layer of tiramisu cream over cake. Refrigerate for 8 hours or overnight and dust coco powder just before serving.
I bet you won’t find anything near this even at the 5-star restaurants of Islamabad, so you definitely gotta try making it at home.
