Mawa kachori is a Rajasthani sweet. I always crave sweet and salty snacks for tea time. And I had also mentioned in my September Mood Board blog that I will be trying Mawa Kachori recipe and share it with you guys. So here it is
Ingredients for Mawa Kachori
We will need 1 cup of flour, 1 tablespoon of sooji, 4-5 tablespoons of ghee, 1 teaspoon of sugar(you can skip if you want to), a pinch of salt and cold water to knead the dough.
Note: Always use cold water to knead the dough so it is a bit firm and not sticky.
200 ml of condensed milk, 2-3 tablespoons of dry milk powder, crushed cardamom, pistachio and almond nuts & saffron
Okay so first you will obviously prepare the dough by mixing maida, ghee, sugar, salt with cold water. Knead the dough and set it aside for half an hour.
For making the filling, put one teaspoon of ghee in a frying pan. Keep the flame low and put condensed milk and also dry milk. Keep stirring the mixture until it leaves the sides of the pan. Do not cook for more than 15 minutes.
Let the mixture cool for an hour and then you can start making the kachori’s
Deep Fry Kachori’s
Heat oil in the pan and deep fry kachori’s on medium to high flame. There you have yummy and khasta mawa kachori’s. In most recipes of Mawa Kachori, sweet sheera is drizzled on hot kachori’s. I subtracted that part of the recipe as khoya made with condensed milk is already too sweet.
They tasted soooo good and I ate 5-6 kachori’s within minutes(well because I made them so I deserve to eat as many as I want😋). Please try the recipe and let me know.
